KÖLSCH This is one of the few ales (top fermenting) still brewed in Germany today. Kölsch originally comes from Cologne in the Northwest part of Germany. The name of the beer is derived from the German name for the city, Koln. Kölsch, in Germany has an appellation associated with the name and style. This beer can legally only be brewed in a twenty mile radius around the city of Cologne. The beer is very dry with a fruity aroma. Some of the flavor compounds formed during fermentation are similar to champagne. The beer is ultra light in color and is brilliantly clear.
